The prices of bread and rolls have increased significantly in recent years, which is due to several factors. According to the Federal Statistical Office in Wiesbaden, prices rose by 34.4 percent between 2019 and 2023, which is above the average increase in consumer prices of 17.3 percent. This price increase is mainly attributed to the increased costs of energy and raw materials.
Roland Ermer, President of the Central Association of Bakers, described the situation as a “cost tsunami” that has affected bakeries in Germany. In addition to energy prices and increased raw material costs, the increase in the minimum wage and increased personnel costs have also contributed to the higher prices for baked goods such as rolls and pretzels. Despite these challenges, Ermer emphasized the importance of handcrafted quality and individual variety in the bakery industry in order to assert itself against discounters and bakery shops.
Another reason for the rising prices for bread and rolls is the increased personnel costs. According to statistics, fewer people have started training in the bakery trade in recent years, leading to a shortage of skilled workers. This trend towards fewer trainees is putting a strain on the industry and is contributing to price increases.
Despite the sharp increase in previous years, it should be mentioned that the price increase for bread and rolls has recently declined. In March 2024, prices increased by only 2.9 percent compared to the previous year, while overall consumer prices increased by 2.2 percent. This development shows a positive trend for consumers, even if prices are still above the average increase.
